The Barbaresco Pajoré 2021 is a remarkably precise and layered Nebbiolo that brilliantly reflects the finesse of the Pajoré terroir. The wine opens with aromas of wild cherry, violets, herbs, tar, and smoky minerality. The palate is harmonious and energetic, with bright red fruit, tight tension, and elegant tannins. The finish is long, balanced, and subtly spicy.
Vinification.
The grapes are harvested entirely by hand and carefully selected. Spontaneous fermentation with natural yeasts is accompanied by a long maceration of 20–25 days. Subsequently, the wine undergoes malolactic fermentation and ages for approximately 24 months in large wooden botti, mainly used oak to preserve finesse and terroir. After bottling, several months of bottle aging follow to fully integrate structure and aromatic complexity.
The Domain.
Sottimano is a family business in Neive that has grown since the 1960s to become one of the most respected producers of Barbaresco. The domain combines classic tradition with modern precision, always with the ambition to express each cru terroir as purely and clearly as possible.
The vineyards are managed sustainably, without herbicides, with a focus on biodiversity, natural yeasts, minimal intervention, and respect for the soil. The long aging and gentle vinification result in elegant, terroir-driven Nebbiolos that are among the most refined of the appellation.
