The Fausoni 2021 displays a combination of juicy red fruit, spices, violets, and subtle earthy notes. The structure is refined yet energetic, with silky smooth but powerful tannins and a mineral precision typical of this cru. The finish is long, clear, and harmonious.
Vinification.
Manual harvesting is followed by spontaneous fermentation with indigenous yeasts and a long maceration on the skins. The wine matures for approximately 24 months in large wooden botti, mainly used wood to respect the elegance of Nebbiolo. After bottling, a short bottle aging follows, allowing the structure to integrate beautifully.
The domain.
The Fausoni vineyard is located in Nieve and produces wines with finesse, freshness, and bright red fruit. Sottimano works entirely sustainably, respecting soil life, natural vinification, low intervention in the cellar, and long aging to fully express Nebbiolo's delicate character.
