This beautiful white wine from the Saint-Aubin appellation is made by the passionate Domaine Lamy-Caillat. 100% Chardonnay.
The grapes for this cuvée come from the prestigious and highly calcareous white soil of the "En l'Ebaupin" vineyard and are harvested with great care to express the full potential of the terroir. After manual harvesting, the bunches are first gently pressed, after which the juice is fermented and then aged for 24 months in oak barrels, with attention to finesse and texture. The wine is bottled by hand.
On the nose, the wine opens with inviting notes of yellow fruit, such as ripe pear and yellow apple, followed by delicate accents of toast and soft spices. On the palate, it is elegant and fresh, with a fine structure and a crisp minerality that lightens the weight of the fruit. The finish is long and refined, with a subtle hint of citrus zest and a touch of vanilla.
This Saint-Aubin "En l'Ebaupin" pairs excellently with dishes such as grilled salmon with beurre blanc, creamy risotto with summer vegetables, or a selection of mild cheeses such as Comté or Brie. It also comes into its own with a subtle lobster dish or a light chicken rosé on a summer's day.

The domain.
Domaine Lamy-Caillat is a small-scale, artisanal winery in the heart of Saint-Aubin, where they work with great precision and attention to terroir.
The annual production is deliberately very limited, around six thousand bottles, ensuring that each cuvée is nurtured with exceptional care. The grapes are harvested entirely by hand and, upon arrival at the cellar, gently pressed in a traditional mechanical press. Everything is done according to the philosophy of organic viticulture.
This domain is one of the highest quality in Burgundy. This, combined with the limited production, has made these bottles true collector's items, the absolute pinnacle of Burgundy.
