Sorì Tildìn 2021 opens with a vibrant perfume of red cherry, raspberry, violets and wet stone, complemented by fine herbs and an elegant minerality.
The taste is extremely refined: silky tannins, pure acidity and an impressive tension that beautifully reflects the energy of this cru-terroir. The finish is long, subtly spicy and very precise.
Winemaking.
The grapes are harvested by hand and gently destemmed. A short cold maceration precedes alcoholic fermentation, which takes place in temperature-controlled stainless steel tanks. During fermentation, delicate pigeage and pump-overs are performed to preserve finesse. The wine ages for approximately 12 months in barriques, followed by approximately 12 months in large casks, and concludes with several months of bottle aging.
The domain.
Sorì Tildìn comes from a historic parcel that has been in the Gaja family for generations. The southern exposure ensures optimally ripening Nebbiolo with great finesse.
The domain works with minimal intervention, natural vegetation, respect for soil life and the complete absence of synthetic agents. The focus is on preserving biodiversity, natural balance and the purest expression of Nebbiolo.
