The 2019 Sugarille displays deep aromas of black cherry, plum, blueberry, earth, graphite and spices. The taste is full-bodied, powerful and complex, with layered dark fruit notes and firm tannins. The finish is exceptionally long and intense.
Vinification.
Sugarille is vinified with longer maceration for maximum concentration. Fermentation takes place in stainless steel, after which the wine matures for over 30 months in large Slavonian oak barrels, with additional maturation in barriques for extra structure and depth. This is followed by at least 12 months of bottle ageing, essential for the integration of the powerful tannins.
The estate.
Sugarille is a historic plot with an exceptionally calcareous subsoil, which results in wines with power, depth and intensity.
The estate operates completely sustainably: natural ground cover, biodiversity management, manual cultivation, no herbicides and an energy-efficient, gravity-fed cellar. Sugarille is the most majestic and powerful expression of Pieve Santa Restituta.
