Sugarille 2011 is an impressive, darkly toned Brunello with great depth and character. The nose reveals black cherry, blackberry and plum, intertwined with licorice, tobacco, dried herbs, menthol and an earthy, stony undertone. On the palate, the wine is compact and muscular, with ripe but clear tannins, a concentrated core of dark fruit and a long, spicy finish in which tension and structure continue beautifully.
Vinification.
The grapes are hand-harvested and rigorously selected. After fermentation, a long aging process focused on structure and integration follows: the wine matures for approximately 24 months in large wooden barrels (botti), followed by about 6 months of further rest in vats/concrete to refine and stabilize the wine. After bottling, additional bottle aging takes place on the estate before release.
The estate.
Sugarille is a historic plot with an exceptionally calcareous subsoil, which produces wines with power, depth and intensity.
The estate operates completely sustainably: natural ground cover, biodiversity management, manual cultivation, no herbicides and an energy-efficient, gravity-fed cellar. Sugarille is the most majestic and powerful expression of Pieve Santa Restituta.
