The Chablis Grand Cru Les Preuses 2020 from Domaine William Fèvre is a Grand Cru of exceptional finesse: less demonstrative than Les Clos, but with a remarkably pure, saline intensity and great length.

The aroma is expressive yet detailed, with notes of lemon and grapefruit, white flowers and chalk, complemented by subtle hints of bread dough and maritime influences. On the palate, it is satiny and taut at the same time: a precise core of citrus and white stone fruit, a vibrant acidity, and a chalky, saline finish that is long and serene.

Ideal with oysters and shellfish, langoustine, white fish ceviche, grilled sole, or refined dishes with fennel, lemon, and fresh herbs.

Vinification

The grapes are hand-harvested. Vinification is done by gravity to avoid pumping. After a short pneumatic pressing (about 1.5 to 2 hours), a light settling follows, retaining fine lees so that alcoholic and malolactic fermentation can proceed naturally. Approximately 50 to 60% of the cuvée goes into French oak barrels (averaging around 6 years old), the rest ferments and matures in small stainless steel vats. Aging lasts 14 to 15 months, of which 5 to 6 months on fine lees in oak for the relevant part; the aging is then completed in stainless steel. After bottling, the wine continues to mature in bottle at the domaine before release.

The Domaine

Domaine William Fèvre is one of the references of Chablis. Founded in 1959 by William Fèvre, the domaine grew to become one of the leading owners of top terroirs in the region, with an exceptional share of Premier Cru and Grand Cru vineyards. In later decades, the domaine became part of the group around Bouchard Père & Fils, with a continuous focus on precision in the vineyard and finesse in the cellar.

The style is classic Chablis: clear, pure, and terroir-driven, with controlled use of wood and a consistent emphasis on tension and saline minerality. Sustainability plays an increasingly important role: the domaine has been working with significantly reduced inputs for years and officially began the conversion to organic certification in 2020. In the cellar, a deliberately gentle approach is used (gravity, limited mechanical intervention) to maximize the natural expression of the fruit and its origin.
