The Chablis Grand Cru Les Clos 2020 from Domaine William Fèvre is the most impressive and complete wine in the range: a Grand Cru that effortlessly combines concentration and tension.
In the glass, it displays a layered nose of ripe citrus, apple, and white blossom, with nuances of bread crust, oyster shell, and wet limestone. The palate is powerful and satiny, with a deep core of citrus and white stone fruit, supported by a firm, saline minerality and a long, taut finish that clearly shows why Les Clos is considered a historical icon of Chablis.
This wine pairs beautifully with grilled turbot, scallops, lobster with beurre blanc, rich fish dishes in cream sauce, or poultry with a delicate, creamy sauce.
Vinification
The grapes are harvested by hand. In the cellar, the gravity principle is followed to avoid pumping over. After a short pneumatic pressing (approximately 1.5 to 2 hours), a very light static settling follows, ensuring that sufficient fine lees are retained for natural alcoholic and malolactic fermentation. Approximately 60 to 70% of the must ferments and ages in French oak barrels (averaging around 6 years old), the rest in small stainless steel tanks. The barrel and tank aging lasts 14 to 15 months, of which 5 to 6 months are on fine lees in oak for the relevant portion; the maturation is then completed in small stainless steel tanks. After bottling, further bottle aging takes place at the domaine before release (duration not specified).
The Domaine
Domaine William Fèvre is one of Chablis' benchmark producers. Founded in 1959 by William Fèvre, the domaine grew to become one of the leading owners of top terroirs in the region, with an exceptional share of Premier Cru and Grand Cru vineyards. In later decades, the domaine became part of the Bouchard Père & Fils group, where the focus on precision in the vineyard and finesse in the cellar always remained central.
The style is classic Chablis: clear, pure, and terroir-driven, with controlled use of wood and a consistent emphasis on tension and salty minerality. Sustainability plays an increasingly important role: the domaine has been working with significantly reduced inputs for years and officially began the conversion to organic certification in 2020. In the cellar, a gentle approach is consciously employed (gravity, limited mechanical intervention) to maximally preserve the natural expression of the fruit and its origin.
