Vaillons is a Premier Cru vineyard on the left bank of the Serein, known for its chalky Kimmeridgian soil and precise, mineral wines. The 2022 from Thomas Pico has a clear, pale gold color with green reflections.
On the nose, the wine opens with aromas of citrus peel, green apple, and white flowers, followed by clear notes of wet stone and chalk.
The wine is crisp and energetic, with a lean to medium body and pronounced, fresh acidity that provides tension and length. The minerality is central and gives the wine a pure, almost saline character. The finish is dry, precise, and persistent.
Aging takes place mainly in stainless steel and partly in used oak barrels, followed by aging sur lie to maintain texture and depth without losing its fresh character.
Excellent with oysters, seafood, ceviche, grilled fish, or simple dishes with citrus notes. Serve at 10–11 °C in a large glass.

Domaine Pattes Loup is the personal project of Thomas Pico, who is considered one of Chablis' most uncompromising and terroir-driven producers. He works organically and with great attention to soil health, biodiversity, and low yields. In the cellar, he employs a natural approach with long aging and very late bottling, making his wines distinctly different from the classic Chablis style. Beauregard convincingly demonstrates this philosophy: a powerful, mineral, and long-lived Chablis built for patience and aging.
