Chablis “Beauregard” 2022 is a deep and concentrated expression of Chablis, from one of Domaine Pattes Loup's most characteristic plots. The wine opens with aromas of lemon zest, green apple, and white peach, followed by pronounced flint, wet chalk, and a subtle saline note. On the palate, it is crisp and intense at the same time, with a firm core of citrus and stone fruit, a lively but perfectly integrated acidity, and a distinct mineral tension. The finish is long, powerful, and extremely pure, with an almost electric precision that lingers for a long time.
Vinification.
The grapes are hand-harvested from old vines on Kimmeridgian soils. After gentle pressing, the must ferments spontaneously with indigenous yeasts, without fining and with minimal intervention. The wine undergoes an exceptionally long maturation on its fine lees, approximately 30 months, mainly in stainless steel tanks with a small portion in neutral wooden barrels for added texture. After bottling, the wine is given additional bottle rest so that tension, structure, and complexity can fully coalesce.
The Estate.
Domaine Pattes Loup is the personal project of Thomas Pico, considered one of Chablis' most uncompromising and terroir-driven producers. He works organically and with great attention to soil health, biodiversity, and low yields. In the cellar, he adopts a natural approach with long aging and very late bottling, making his wines distinctly different from the classic Chablis style. Beauregard convincingly demonstrates this philosophy: a powerful, mineral, and long-lived Chablis built for patience and aging.
