Lamy-Caillat's Chassagne-Montrachet Premier Cru Les Caillerets 2023 is an impressively precise Chardonnay that embodies the purity of one of the appellation's most mineral terroirs.

The grapes are hand-harvested from the stony, calcareous slopes of Les Caillerets, where the thin soil and large amount of limestone result in small, concentrated berries.

In the cellar, the grapes are gently pressed in a traditional mechanical press, after which spontaneous alcoholic fermentation takes place in oak barrels. Malolactic fermentation also proceeds without intervention, followed by a long maturation of over two years on the fine lees in the same barrels. Afterwards, the wine rests for a few more months in stainless steel to preserve its precision and tension. 

In the glass, the wine displays an expressive and refined aroma of lemon peel, white peach and blossom, intertwined with subtle notes of almond, white pepper and a pronounced chalky minerality typical of this climat.

The taste is energetic and seamless, with a tight structure, a deep core of citrus and stone fruit, and a vibrant acidity that gives the wine remarkable freshness. The finish is long, pure, and impressively serene, carried by the characteristic chalky tension of Les Caillerets.

This Premier Cru shines alongside dishes such as finely prepared shellfish, grilled sea bass, lemon risotto, poultry with a light cream sauce, or elegant vegetarian creations based on asparagus, fennel, or artichoke. 

The domain.

Domaine Lamy-Caillat is a small-scale, artisanal winery in the heart of Saint-Aubin, where they work with great precision and attention to terroir.

The annual production is deliberately very limited, around six thousand bottles, ensuring that each cuvée is nurtured with exceptional care. The grapes are entirely hand-harvested and, upon arrival at the cellar, gently pressed in a traditional mechanical press. Everything is done according to the philosophy of organic viticulture. 

This estate is qualitatively one of the finest in Burgundy. This, together with the limited production, means that these bottles have become true collector's items, representing the absolute pinnacle of Burgundy.
