Nuits-Saint-Georges 1er Cru “Aux Boudots” by Benoît Chevallier is a serious, structured Pinot Noir with the typical combination of power and precision that makes this plot so sought after. On the nose, black cherry, blackberry and ripe raspberry emerge, complemented by violets, black pepper, cedar and a subtle earthy touch. On the palate, the wine is compact and deep, with a firm core of dark fruit, vibrant acidity and fine-grained yet clearly present tannins that provide backbone and ageing potential. The finish is long, spicy and mineral.

Vinification.
The grapes are harvested by hand and rigorously selected. Vinification starts with a short cold maceration to preserve aromatic freshness, followed by spontaneous fermentation with indigenous yeasts. Extraction is controlled and gentle to maintain finesse, with maturation in French oak barrels to enhance structure and integration. The exact duration of barrel and bottle ageing for this cuvée is not specified.

The domain.
One to watch. A name that is beginning to establish itself among the "established" values. Domaine Benoît Chevallier is located in Vosne-Romanée and is led by Benoît Chevallier, who works on a small scale with a strong focus on terroir and precision. The domain operates according to organic principles, with a lot of manual work in the vineyard and attention to soil health and biodiversity. In the cellar, the approach is deliberately minimal and focused on purity: natural yeasts, controlled extraction and maturation that keeps the fruit and origin central. As a result, even the regional cuvées deliver a remarkably refined, "Côte de Nuits"-like signature.
