Les Jardins Philosophiques 2020 from Château Bouscassé is a characterful, dry Pacherenc du Vic-Bilh that combines the finesse of Petit Courbu with a subtle, energetic tension from Petit Manseng.

The wine presents an open, floral nose of meadow flowers and white blossoms, complemented by ripe citrus, peach, and a hint of exotic fruit. Beneath, there's a discreet, chalky minerality that keeps the aroma taut and clear.

On the palate, it is supple and full-textured, yet with enough fresh grip to remain gastronomic. Ripe fruit notes are carried by vibrant acidity and a soft, slightly spicy finish. The aftertaste is clean and persistent, with a fine balance between roundness and tension.

This wine pairs excellently with shellfish, grilled fish, risotto (with lemon or fennel), poultry with a light sauce, foie gras prepared freshly, or elegant vegetarian dishes with, for example, asparagus or artichoke.

Vinification.

The grapes are selected by plot and, after harvest, pressed very slowly and gently, with strict selection of juices at the press. Alcoholic fermentation occurs temperature-controlled in stainless steel tanks (approximately 16–18°C) to preserve aromatic precision. Subsequently, the wine matures for 10 to 12 months on fine lees in tanks, with regular bâtonnage for extra texture and depth. No oak ageing is deliberately used. The wine is bottled after élevage.

The estate.

Château Bouscassé is the historic family estate in Maumusson-Laguian, in the heart of Vic-Bilh. The estate gained international recognition under Alain Brumont, who, from the 1980s onwards, redefined the reputation of Madiran and Pacherenc du Vic-Bilh through a sharp focus on terroir, grape varieties, and meticulous vinification. While Montus is often the powerful, visionary standard-bearer, Bouscassé represents the deep, classic expression of its clay-limestone soils and the long tradition of the house.

In the vineyards, the emphasis is on sustainable, terroir-driven agriculture: extensive manual work, thoughtful plot selection, attention to soil life and biodiversity, and a restrained approach to interventions to respect the vineyard's natural balance. This same philosophy is extended to the cellar with precision, patience, and a vinification that centers the character of the grape and origin, ensuring that even the dry white wines – such as Les Jardins Philosophiques – gain a clear identity and gastronomic added value.
