Sancerre “Les Caillottes” 2022 from François Cotat is a refined, mineral-driven Sauvignon Blanc that beautifully translates the typical stoniness of the caillottes soils. The nose offers notes of lime, lemon blossom, white peach, and green apple, complemented by a distinct hint of wet stone and chalk. On the palate, the wine is crisp and clear, with precise acidity, juicy citrus fruit, and a lightly smoky-mineral undertone. The finish is long, clean, and refreshing, with an elegant tension that gives the wine its class.

Vinification.
The grapes are harvested by hand and gently pressed. Fermentation proceeds slowly and controllably with minimal intervention, aimed at preserving freshness and terroir. The wine ages on its fine lees to develop extra texture, without losing its pure minerality. Aging typically lasts about 8 to 12 months in barrels and/or vats, followed by a short bottle aging before bottling.
