Lamy-Caillat's La Romanée Premier Cru 2023 is an extremely refined Chardonnay that reflects the pure essence of the chalky terroir around Chassagne-Montrachet. The grapes are harvested entirely by hand and carefully selected before being gently pressed in a traditional mechanical press.
Fermentation occurs spontaneously in oak barrels, where malolactic fermentation also takes place. Subsequently, the wine matures for over two years on its fine lees in the same barrels, which gives it a special depth and an elegant structure. This is followed by a short resting period in stainless steel to refine the tension between power and minerality.
On the nose, the wine displays a complex array of aromas: ripe white peach, lemon zest, and blossoms are supported by subtle notes of hazelnut, brioche, and a refined, almost saline minerality.
On the palate, it is both intense and crystal clear, with a beautiful balance between richness and freshness. The fruit is pure and precise, carried by energetic acidity and a long, layered finish where chalky tension and soft oak notes elegantly converge.
At the table, this Premier Cru is an ideal partner for high-quality dishes such as roasted turbot, lobster with a light beurre blanc, poultry in a creamy sauce, or a refined risotto with porcini mushrooms.

Domaine Lamy-Caillat is a small-scale, artisanal winery in the heart of Saint-Aubin, where precision and attention to terroir are paramount.
The annual production is deliberately very limited, around six thousand bottles, ensuring that each cuvée is raised with exceptional care. The grapes are harvested entirely by hand and gently pressed in a traditional mechanical press upon arrival at the cellar. Everything is done according to the philosophy of organic viticulture.
This domain is qualitatively one of the most outstanding in Burgundy. This, coupled with the limited production, has made these bottles true collector's items, the absolute pinnacle of Burgundy.
