Lamy-Caillat's Chassagne-Montrachet Village 2023 is a pure and characterful expression of Chardonnay, supported by the chalky terroir of the Côte de Beaune.
The grapes are harvested entirely by hand and upon arrival in the cellar, gently pressed in a traditional mechanical press, ensuring that only the most refined juice is used. Alcoholic fermentation takes place spontaneously in oak barrels, where malolactic fermentation also occurs.
Subsequently, the wine rests on its fine lees for more than two years, also in oak barrels, which provides depth, texture, and subtle wood support. After that, it undergoes several months of aging in stainless steel, preserving its tension and precision.
In the glass, the wine presents aromas of ripe citrus, peach, and white blossoms, complemented by delicate notes of toast, almond, and a slight saline minerality. The taste is both rich and taut, with a perfect balance between ripe fruit, freshness, and a distinctive chalky length. The finish is refined and persistent, with a subtle interplay of creaminess and freshness.
This Chassagne-Montrachet is exceptionally versatile at the table. It pairs beautifully with dishes such as grilled turbot, saffron risotto, poultry with creamy sauce, or refined preparations of lobster and scallops.

Domaine Lamy-Caillat is a small-scale, artisanal winery in the heart of Saint-Aubin, where work is done with great precision and attention to terroir.
The annual production is deliberately very limited, around six thousand bottles, ensuring that each cuvée is raised with exceptional care. The grapes are harvested entirely by hand and upon arrival in the cellar, gently pressed in a traditional mechanical press. Everything is done according to the philosophy of organic viticulture.
This domain is qualitatively one of the most outstanding in Burgundy. This, combined with the limited production, has made these bottles true collector's items, the absolute top of Burgundy.
